Even the salt tells a story – Kalahari salt replaces imported alternatives, and olive oil is proudly South African.
When ingredients can’t be sourced locally, they’re often grown right here. Ten varieties of microgreens thrive in a small garden beside the kitchen, tended by the chefs themselves. Once harvested, the spent coco peat is shared with local gardeners to improve soil and water retention – a small, satisfying loop of sustainability.
Menus shift with the seasons, leaning into whatever Zululand offers at the time – whether that’s a Mazuri Colada cocktail made with locally distilled pineapple gin or hearty baked goods crafted from Champagne Valley stoneground flour. The result is a dining experience as fresh and authentic as the landscape itself.
